Today, we no longer limit ourselves to serving the classical meat, sausage & fish products manufacturers. Our customers include producers from the areas of vegetable processing, gastronomy, baked goods, vegetarian and vegan products, pet food, etc., as well. Those products, too, must be cooked, boiled, dried, baked, cooled, showered or matured. Each of these many products has its own individual demand in thermal treatment.
The flexible equipment of our universal systems enables FESSMANN to offer suitable facilities for those products of food processing as well, which permits efficient and standardised production for our customers. Combined with technology know-how from more than 90 years of experience, we can develop the right process for nearly any planned application.
One good example for this is a tofu producer in my sales area to whom we recently delivered a machine. If you want to flexibly produce soy products (e.g. tofu pieces, tofu sausages, …), you need a plant that is suitable for lying and suspended products alike. We have developed a special design of our tried-and-tested Ti3000 for this, which has been adjusted to the customer's needs with a higher horizontal share of the air flow in the chamber. A trolley load of approx. 250 kg tofu can achieve continuous even drying and smoke colours in no more than 120 minutes.
In this case, we worked with our 3-level smouldering smoke generator RATIO-TOP and beech wood chips for particularly intense smoke. Smoulder smoke and other wood types are available as well depending on the desired aroma.
The customer also uses the system to pasteurise and preserve his products. After vacuuming the tofu, the products can be comfortably moved into the system, where the automatic program will take care of everything else.
